Job Description
Description We are looking for an experienced, passionate and creative Executive Chef to lead the culinary team at the newly-renovated Restaurant at Ventana. The Restaurant at Ventana reflects the rich abundance of local, seasonal ingredients of the Central Coast. Nestled in the wood side, 1,200 feet above the Pacific Ocean on the Big Sur Coast the restaurant is located at the luxurious Ventana Inn and Spa. Overview: The Executive Chef is responsible for managing all aspects of the kitchen and culinary personnel, ensuring the quality preparation of all menu items and the proper handling/storage of all food items in accordance with standards. This position coordinates the purchase of all food and develops menus in accordance to approved food and labor costs. The ideal candidate would have the following essential qualifications: * Five plus years as an Executive Chef at a high-volume, high-end restaurant. * Experience with a multi-faceted food and beverage operations including but not limited to restaurant, patio dining, banquets, special events, pastry/baking, and room service, * Strong aptitude in financial management, financial reports and analysis including but not limited to labor costs, cost and expense control. * Excellent food and wine knowledge and ability to develop menu concepts that is consistent with the California Rustic restaurant theme. * Proven ability to direct the performance of the culinary team including but not limited to training, organizing and delegating work assignments and assessing performance in a detailed manner. * Proven ability to work all stations. * Previous experience developing and maintaining relationships with local and national vendors. * Strong English communications skills both written and verbal. * Strong computer knowledge in a Windows and Microsoft Office environment. * Strong interpersonal skills and the ability to work well with co-workers and the public. * Sanitation and food handling certifications desired. * Previous destination and/or luxury resort experience a plus. * Ability to communicate in a second language preferably Spanish.
